Quick Crunchy Asian Slaw

I whipped up this quick slaw to go with my Mongolian Sticky Ribs, and it was a huge hit! It is crisp, tangy, light, and best of all only a few ingredients if you already have the dressing made! Here’s my method:

For the Asian Carrot Ginger Dressing:

1/2 lb carrots, roughly chopped

1/4 cup chopped peeled fresh ginger

1/4 cup chopped onion

1/4 cup rice vinegar

2 tbs soy sauce (not paleo – omit and use coconut aminos if wanting to be 100% compliant)

1 tbs Asian sesame oil

1 tsp organic agave syrup

1/2 cup light olive oil

1/4 cup water

salt to taste, if desired


For the Slaw:

3 cups cabbage, thinly sliced

Handful of baby carrots, shaved with a peeler

Handful of cilantro, chopped

1/2 cup Asian Ginger Dressing

1/2 tsp ground black pepper

Chopped peanuts for garnish


Make the dressing: Add all ingredients except the water into a blender. Blend until it is thick, but no distinguishable pieces of carrot or ginger remain. Open blender, and add water to desired texture. Here is what it should look like:

I make this at the beginning of the week, and refrigerate to use as desired. It is great on all sorts of things! Now, on to the slaw!

Combine cabbage, cilantro, ground pepper, and carrot dressing in a bowl. Mix well. Take a handful of the dressed cabbage and place it onto your plate. Top with chopped peanuts and shaved carrots. Garnish with thinly sliced peppers if desired.


This slaw accompanied my 27 Minute Mongolian Sticky Ribs beautifully! Not to mention it has a beautiful presentation of colors. Enjoy!
