These strawberries are a foolproof delicious dessert for any occasion! We made them as a family for Valentine’s Day. Here’s the method:
1 lb strawberries, rinsed and allowed to dry well
1 package semisweet chocolate chips
1 tbs coconut oil (can sub crisco if desired)
Place the chocolate chips and coconut oil into a microwave safe bowl. Start off by heating for 30 seconds, stir, heat for an additional 10 seconds at a time until the chocolate and coconut oil is completely melted.
Dip the dry strawberries into the chocolate and place them on a wax paper lined baking sheet (DRY is important because if any water is introduced to the heated chocolate mixture the chocolate will seize up and become chunky and flaky, gross!)
The chocolate will start to harden on the strawberries once placed onto the cookie sheet. Continue until all the strawberries are dipped.
Once all of the berries are dipped, you can add optional stripes to them by drizzling the left over chocolate onto the berries. Place the berries on the sheet tray into the freezer for 5 minutes. Remove the berries from the freezer and enjoy!
I keep mine (if there is any left over) in the fridge in an air tight container.
